Homemade Turkey Sausage

I use this sausage to make little sausage patties for breakfast. I was looking for a sausage without such a huge fat content and with no added sugars or preservatives. This is a combination of a couple different recipes I found online. I mix up a big 2 pound batch on the weekend and then use it all week. I usually eat 2 ounces for breakfast with some eggs, but if you’re a bigger guy, definitely double that, at least.


  • 2 pounds 93/7 ground turkey

  • 2 teaspoons salt (I use kosher so you could use a little less if you’re using normal salt)

  • 1 1/2 teaspoon pepper

  • 1 teaspoon dried fennel, crushed

  • 1 1/2 teaspoon dried sage

  • 1 1/2 teaspoon dried thyme

  • 1/2 teaspoon of red pepper flakes (you can increase this to make it spicier)


  1. Mix everything together!

  2. When you’re ready to cook, heat a skillet over medium-high heat. Shape turkey into little patties (I usually make them about 1 ounce each). Cook until they are nice and browned on each side and no longer pink in the middle, about 6 minutes.
