Fun Food Friday - Ham and Egg Cups

This is the debut of our Fun Food Friday! Each Friday we’ll post a healthy recipe for you to try, either from one of us, a site we like, or one of our awesome members.

Our first recipe is Ham and Egg Cups. This is one of my favorite quick breakfasts. They’re super easy to make. I make them with pesto and tomatoes on top, but if you don’t have that on hand they’re also really good with some hot sauce on top. I cook them for about 13 minutes so the whites are set and the yolks are still a little runny. You can cook them a little more or less depending on your preferences. You will need a regular sized muffin tin and some oil spray of your choice.

Ham and Egg Cups

  • 6 slices of deli ham
  • 6 eggs
  • 6 teaspoons pesto
  • 6 cherry tomatoes, halved
  • salt and pepper


  1. Preheat oven to 400 degrees.
  2. Spray muffin tin cups with oil spray and then line each cup with a slice of ham.
  3. Crack an egg into each ham cup and then sprinkle with salt and pepper.
  4. Top with a 1 teaspoon of pesto and two tomato halves.
  5. Bake for 12-14 minutes, or until the whites are mostly set and the yolks are still runny.
